Our Cheeses
Here at Goatsbeard Farm
we specialize in cheeses made from both
pasteurized and raw (unpasteurized) goat milk. These are all known as “farmstead
cheeses”, which means they are made on the
farm where the milk is produced. We, as
farmer/cheesemakers, control quality all
along the way—from feeding and handling the
goats to making, aging and packaging the
cheese. Our standards are very high.
We offer the following cheeses at Goatsbeard
Farm: Fresh Rounds, Fresh Tubs, Soft-Ripened Cheese,
Feta, and
Raw Milk Cheese.

We offer the following
fresh cheeses, all made from pasteurized
goat milk, culture, enzymes and salt.
- Plain Round: a hand-ladled fresh cheese,
mild and creamy, excellent for slicing or
marinating. First Place Winner, plain chevre category at the American Goat Dairy Association Cheese Competition 2005. Min. 4 oz.
- Pepper Round: a plain round of fresh
cheese, rolled in cracked black
pepper. Min. 4 oz.
- Herb Round: a plain round of fresh
cheese, rolled in dried herbes de Provence—tarragon,
thyme, rosemary, basil, savory, organic
lavender flowers and fennel seed. Min. 4 oz.
- Marinated Slices: a plain round, sliced
and placed in extra virgin olive oil with
herbes de provence, whole black
peppercorns, and sun-dried tomatoes. Min. 4
oz. of cheese.

- Plain Tub: a fresh goat cheese, mild and
creamy, softer than the Plain Round, and
suitable for spreading or mixing. 5 oz.
- Herb Tub: fresh cheese, soft and
spreadable, enhanced by the addition of
herbes de Provence . 5 oz.
- Garlic Tub: a soft goat cheese, enhanced
by the addition of fresh minced garlic grown
at Goatsbeard Farm. 5 oz.
- Chipotle Tub: fresh cheese spiced with
chipotle—a smoky jalapeno punch. 5 oz.

- Prairie Bloom: an aged fresh round
with a delicate bloom rind on the outside
and a soft and flavorful center.
Available in 3 oz. round.

Goatsbeard Farm also makes delicious aged
cheeses from raw goat’s milk, culture,
enzymes and salt. All of these cheeses are
aged a minimum of 60 days, some much longer.
- Walloon: an aged “hard” cheese with a
nutty flavor, this slices and grates well.
Delicious on sandwiches, pizzas or salads.
Available in 4 oz. wedges.
- Moniteau Blue: a rich, piquant tasting
blue-veined cheese, delicious crumbled over
salad or served with fruit. Missouri State
Fair Blue Ribbon Winner 2002 and 2003.
Available in 4 oz. wedges.
- Osage Orange: a beautiful washed-rind münster, delicious and full of flavor as only a European-style münster can be.

information regarding goat cheese,
particularly our fresh goat cheese.

perishable and must be
stored in your
refrigerator.
However, for maximum
enjoyment, remove the cheese
about 30 minutes before
serving and bring to
room temperature.
